Super Healthy Cookie Recipe (that tastes great too!)
Well, I think I've finally done it! After several attempts, I believe I have finally achieved perfection in a cookie. At least by my standards. These guys have quite an impressive nutrition profile and a solid nutrient ratio to boot.
Coming in with an impressive 7 grams of HEALTHY fats, 2 grams of protein and 2 grams of fiber, these guys are sure to satisfy! And, they are made with 100% Thai Organic Coconut Blossom Sugar, which is a gift from Mother Nature herself!
Derived from the fresh sweet nutritious sap of coconut blossoms, this sugar has a higher nutritional content than other sweeteners. It contains amino acids, especially glutamic acid, is high in Magnesium, Zinc, Iron and Potassium, and is a natural source of vitamins B1, B2, B3, and B6. Furthermore, it registers low on the glycemic index, at only 35!
Ingredients:

1/2 cup Organic Grass-fed Butter
2 Tbsp. Organic Coconut Oil
1/4 cup Organic Thai Coconut Blossom Sugar
2 eggs
1/2 tsp. Organic Vanilla
1/2 cup Organic Coconut Flour
1/2 cup Einkorn All Purpose Flour*
1/2 cup Organic Raw Almond Flour
1/2 cup Organic Oatmeal Flour (simply grind rolled oats in you coffee grinder or food processor)
2 Tbsp. Organic Ground Flaxseed
1/2 cup Organic Shredded Coconut
2 Tbsp. Chia Seeds
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Pink Himalayan Sea Salt
6 ounces Organic Dairy and Soy Free Semi Sweet Chocolate Chips
1/2 cup chopped walnuts (optional)
Cream butter, coconut oil and coconut sugar. Add eggs and vanilla and mix thoroughly. Combine the next 10 "dry" ingredients. Add dry ingredients to the butter/sugar mixing well. Add chocolate chips and nuts (optional) stirring by hand to combine. Refrigerate dough for at least 30 minutes before dropping by the teaspoon onto a cookie sheet. Bake at 375 degrees for 6 minutes. Once cooled, refrigerate or freeze cookies for best texture.
*To make a gluten free variation, simply replace the Einkorn Wheat Flour with the gluten-free flour of your choice.
